Hello Fresh review

I absolutely love to cook! I know for some people it’s the biggest stress of the day but for me after being busy at work I find it so relaxing to come home and spend time preparing something delicious for dinner. Just because I love cooking doesn’t mean I always feel creative and sometimes I have a complete mental block for meal ideas – something I’m sure most of you can sympathise with.

If I go through a phase of being stuck for ideas I love ordering a Hello Fresh box to mix things up and try some new recipes. The meals all come bagged up and each ingredient is perfectly portioned with a matching recipe card to make your prep as easy as possible and reduce waste. We’ve been getting the boxes for the last couple of weeks and I’ve been enjoying the meals so much that I thought I’d share what we ate last week with you.

t before the Wednesday meal selection deadline! My boyfriend doesn’t like seafood, although he just about eats prawns, and I don’t like coconut but I’m so glad we didn’t swap it out. The meal was absolutely delicious and it was nice to try something different for once. It was spicy, flavoursome and exactly the warming dinner we needed after a cold day at work.

Tuesday – cheesy chorizo and black bean enchiladas with citrus salad

This meal is one of my absolute faves! We’ve had Hello Fresh boxes in the past and this meal was so delicious when I saw we were getting it again I couldn’t wait. Mexican food is my all-time favourite and this dish is definitely up there, especially once it’s baked with its creamy topping. The salad is one to write home about too – it’s now easily the most requested salad dressing in my house.

Wednesday – butternut squash and bacon risotto

I make a lot of risottos but this flavour combination is definitely up there! I didn’t think it was as flavoursome as some of the risottos I make myself (a glug of wine always adds something special) but it was really tasty all the same and something I’ll be recreating and tweaking.

Thursday – stir fry pork with egg noodles and bok choi

Any recipe with noodles in is another favourite for us and this was no exception. It was filling, super tasty and the first time I’d cooked bok choi. It’s one of those vegetables that I absolutely love and always order in

restaurants but I’ve never been brave enough to cook at home. After realising how simple and delicious it is, bok choi will be featuring in my stir fries from now on.

Friday – herby roasted chicken with potato wedges, roast veg and saffron aioli

I saved the best until last with this meal! This was the quickest, easiest and most delicious dinner we had all week. After work (and the pub on a Friday) there’s nothing better than a meal you can throw into the oven and leave to do its thing. Saffron isn’t an ingredient I’ve used before, mostly because of the price, but it was so amazing I might even splash out and treat myself in future just so I can make this meal again!

So there you go, a week’s worth of meals courtesy of Hello Fresh and definitely something I’d recommend trying. We get the regular boxes but they also do a veggie option and a rapid box if you don’t have time to cook in the week (some of the recipes are a bit faffy and can take quite a while).
